Light Roast Maragogipe from Papua New Guinea

This coffee is affectionately referred to as “Big Red” on Sigri Estate in Papua New Guinea. This is due to this cultivar (cultivated - varietal) being known for producing larger-than-normal coffee cherries and larger-than-normal coffee seeds. The taste on the delightful dollop goes straight for citrus and then brings in notes of tropical fruits and baking spices. Information about the roasting

This coffee is just a blast! This roast is based on one of the first roasts I ever did of this coffee, and it reflects a balanced approach that still accentuates the fruitiness of the coffee. It does subscribe to the older logic that larger beans benefit from a longer roast as it hits the first crack later (around 9:30); however, this savoriness which the longer roasting style brings to the table, fits amazingly with this coffee’s flavor as a dollop.
